6/23 - Junk Drawer (It's always sunny in Portland) ...so Recipes?

i'm not a chef, a sous chef, a cook, or someone that even routinely makes a good dinner BUT i have one killer dish that my family dies for.

 

Everyone has a killer dish...for dates, for love ones, for friends, for special occasions...etc.

 

so please share your recipe!!!

 

also, i have a gas grill and not a bbq grill...any good grill or bbq methods and recipes?

 

here's my killer easy recipe.  every time i make this, my wife basically throws herself at me...for more reasons than one

 

Seafood Pasta (Clams are best)

For the Linguine:

1.  buy a couple packs of linguine.  boil it.  add a spoon of olive oil.  once tender, drain with cold water a leave it on the side.  (cold water so it won't stick)

2.  Chop up / mince about 3 garlic gloves, put it on the side

3.  Chop up/mince a batch of basil, put it on the side

4.  cut up some lime, put it on the side.

5.  open a bottle of white wine (the better the wine, the better the outcome)...drink a quarter of it while cooking

Cooking the Clams:

1.  get a big pot.  add a chunk of butter to the bottom.  add the first set of minced garlic clove to the pot.  add about 4 spoons of oil then cook it on high.  add about a cup of wine.  add the clams.  make sure you have the lid close on the pot to keep the juices

2.  when the clams start opening, add some more garlic and then i would take a pack of those pizza crush red pepper, add them to the mix to get a kick.  add a dash of salt a pepper.  add basil (you don't want to add this too early) toss the pot around a few times.

3.  let it cook about ten minutes or until all the clams open up. 

Finishing touch:

You can mix the pasta and clams in a giant pot but for a nice dinner, i usually toss each plate.  so i'll grab some pasta, get some clams, make sure you get some juice, and toss it in a separate pan.  (this is why you need the extra garlic clove, olive oil and extra butter...and the more butter, the richer the texture)

 

this takes less than 30 minutes...Add mussel, shrimp, and scallops for more flavor.  (if you had shrimp, cook some of it first outside the main pot)

there you go...you will look like a chef and it will be 5 star tasty.  use the rest of the bottle of wine at dinner, and maybe some french bread, with vinaigrette salad to finish the meal package.

this is 100% guaranteed to impress ANYONE, especially your tummy.  (just don't let them in the kitchen to see how easy it is...)

some show did a test on MSG versus non-MSG...

they had 40 people, 20 eating chinese food with MSG, and 20 without…

the 20 without complained about stomach illness, headaches etc….only 1 out of the 20 who had the msg complained

I love that recipe. It's my standard chinese noodle recipe

I use hot chile oil instead of peppercorns. But the beauty of the recipe is that it’s really flexible and you can take it a bunch of different directions.

My Recipe

Brown 1 pound ground beef (and drain). Add 2 cups hot water, 1 cup milk , packet of sauce mix, and pasta. Hmmm….good. My cousin Eddie thinks you can even leave out the Ground Beef

I figured out chicken on the BBQ pretty well.

This is the standard old briquette, rusty grill and FIRE machine…no gas.

It’s all about the fire. Get a good pile of briquettes going, then cover it with 4 or 5 bricks…the larger fire bricks are best. You can remove them from your hearth with a small hammer and chisel if necessary.

Let the whole mess heat up and the fire burn about halfway down. Prepare your whole roasting chicken with salt, pepper, sage and garlic rub…or whatever turns you on. Don’t forget sage, though. Very important.

Skewer the bird with a couple shish-ka-bob spears, sapling shoots, rebar or anything that is handy. Remove 2 hot bricks from your fire. Wear some gloves (and flip flops ’cause embers falling on your feet is FUN!). Keep the remaining bricks directly on top of the fire. Install the grill thingy, then lay your two bricks on their sides to support the ends of the skewers. Install chicken and BBQ lid, cook for about 15 minutes, flip and cook for another 20 or so.

If you don’t have a probe type thermometer, get one. The biggest benefit is not knowing that the meat is cooked (it’s good for that, too), but rather knowing that the meat isn’t overcooked. 165-170 degrees around the joints is good.

You can easily fit two birds at a time in a standard size Weber. You’ll need 2 more bricks, and you wind up with 4 bricks on top of the grill when roasting.

No blackening aka burnt

The bricks are the key. The insulate the bird from the most intense heat of the coals and maintain an even temperature. I haven’t tried regular chicken parts directly on the grill with this method (always the whole bird), but I would imagine it would have the same effect.

Chicken breasts on a grill

Made easy and yummy.
1/4 cup oil
1/4 cup soy sauce
heavy sprinkling of Mrs. Dash spicy
Marinate chicken for at least two hours.

Throw on the grill and cook to your spec’s.

I make this on the gas grill all the time.

milanesa napolitana

thin beef steaks
eggs
mozzarella cheese balls
fried tomato/tomato sauce (either)
sliced ham
parsley, garlic

get a couple of eggs, beat them in a small bowl, throw some parsley and garlic
in a large dish prepare breadcrumbs
Put the thin beef steak into the egg mixture, then put in the breadcrumbs.
Bread the meat, both sides, and hit it a couple of times with your open palm to make sure the bread cover stays stuck, otherwise it’ll fall off when you cook it.
Add oil to a frying pan, when the oil is hot begin to fry the breaded meat.
Flip the meat to allow it to cook on both sides.
When the breaded meat is cooked, place it on a plate with paper towels to absorb the oil.
Cut the mozzarella balls in thin slices and put them on top of the steak.
Once is it covered with mozarella, put on top a slice of ham, and cover with tomato sauce at will. Also you can throw some oregano.
Put in an oven tray, and heat it until the mozarella starts to melt.
Enjoy!

I like to make soups, sauces, huge chunks o' meat, stuff like that.

Manhattan Clam Chowder, Spaghetti Sauce with fresh tomatoes, chili, stew, brisket (top secret recipe from my jewish grandmother), etc. I never cook things quite the same twice. I have been too uninspired to cook for months though, it helps when you live with someone who likes to eat your food, and i haven’t for a while now :-(

“Austin’s got potential,” says Kevin Love. “He’s a guy you can gamble on, like Anthony Randolph in Golden State. His upside is, at 6’10”, he’s going to get better." The question is whether he’ll get better in college or the NBA. He hasn’t signed with an agent and might return to Gonzaga.

Doug Says: “Daye is a project with upside, but he’ll need to spend some time in the D-League.”

“Of course, Gani is a fellow Yellow Jacket,” says guard Mario West. “He reminds me of my teammate Al Horford: strong and really active in the paint. Plus, being a walk-on who went undrafted before making the league, I enjoy watching the draft and seeing guys get that opportunity.”

Doug Says: “This would have been a good pick if Gawal were still in the draft.”

20. Jazz/Kyle Korver select …

Jrue Holiday, G, UCLA

“An important factor in any player we add is an unselfish mentality and high basketball IQ,” says swingman Kyle Korver. “Holiday has both and he likes to get after it on defense, making him a good fit for us. And at 6’4”, he’s versatile enough to play point or shooting guard."

Being a Husky homer is a nonissue for center Spencer Hawes: “Jon is a rebounding monster. He had 50-something career double-doubles. Folks say he’s under- sized [6’7”, 255], but he’s got the best motor of anyone I’ve ever run with. And we’ve got tall guys; what we need is bulk."

Tyler Hansbrough, PF, North Carolina

1 pack of Korean instant noodles

Cook in a pot with water and the included seasonings. After about one minute of boiling crack an egg into the pot. Mmmm

I actually just started to really cook this past week. Up until now it had only been easy stuff like boxed mac-n-cheese, instant noodles, eggs, and steaks. Right now I’ve just been looking at recipes from sites like allrecipes.com. So far I’ve made lasagna, chicken alfredo and some other things.

Just adds chicken, cabbage, carrots, and an apple to ramen noodles and curry chunks. It’s really good.

Something else that you can do with ramen noodles

Is cooking them up like normal, but drain them after they’re done cooking. Add some veggies (I like peas and carrots for this), chinese sausage (lap xuong) that has been chopped up, hoisin sauce, a little bit of soy sauce, and an egg that has been cooked over easy/medium. Break the egg yolk on the noodles then mix everything together. It’s really simple and yummy if you’re looking for a quick fix.

actually, I'm not exactly sure if it works money wise

I don’t remember the exact cap space amount with Freeland and Koponen gone. And I don’t know the exact difference between Thomas’ contract and Bayless, Outlaw combined. And I have no idea if any of those teams actually like those deals, but they seem moderately reasonable based on rumors I’ve read.

I’m not crazy about thyme so I usually cut it down to half or less. I also love celery so I usually add a stalk. Do not skip the step of taking the meat out of the loaf pan and putting it on the parchment paper. In fact, we have these small loaf pans meant for small rolls and I will often make 8 or so small meat loafs. You get more glaze that way and everyone can have their own loaf.

I’ve made this with turkey meat, too, and it comes out OK but the texture isn’t great.

Buford has made a lot of mistakes recently. That team would be killer with Scola at the 4.

Jefferson makes a lot of sense. If Splitter comes over, a lineup of Parker-Ginobili-Jefferson-Duncan-Splitter is intriguing.

A trade for nuthin’, givin’ away a guy who everyone thought would be good in the NBA.

It’s a good deal for everyone, and I’m glad we didn’t get Jefferson. He really isn’t that good, and we’ll see how effective he is in the halfcourt for the Spurs. I foresee a 14 PPG average and still worse defense because of age.

Milwaukee didn’t need him (they shoulda’ moved Yi for some of the Warriors’ young talent, which is what the Nets should do now also), so might as well get savings.

Mine includes water and trash and uhhh… home association fees or whatever the condo owners own.

We will buy a house in Portland in the near future. I could either have Scottie Pippen’s old mansion overlooking downtown Portland, or a 2 bedroom house in Venice.

I like Venice, but it’s a tough call.

I think it I figured it out once and when I included what I paid for heat in Portland in the winter, we were only paying about $100 more here. The problem is that it’s not always winter in Portland. We also have a security guard and a pool I never use.

I know a lady

Who is trying to get on a place that is leased on land owned by Kamehameha and they lose the lease in two years. No one wants to buy one of the condos because they know they will get screwed and the maintenance feel is almost a $1,000. Someone told her they were just trying to break even and rent their place for $4,000 a month so she offered $2,000.

I half watched Step Up 2, but she really was in the bedroom watching ‘Served’ without me, thankfully.

I saw it once and it was enough to get the idea of what it was going for.

She yelled and called me in when the one guy had the Rasheed jersey on. I knew she was going to, because I remembered it, but I didn’t think she had. So I only saw that part.

You want a grill recipe?

I have THE grill recipe. Nobody that tries this recipe comes back at me with anything less than super positive reviews. Its the shizzle.

First, get yourself some steaks, doesn’t really matter what kind, but obviously the nicer the cut the better it turns out. I have done this with the super cheap stuff as well, and it still turns out GREAT. This recipe was originally created for flank steak, so if you got the $$$, splurge on the flank. It works with any steak just fine though.

Buy yourself some light beer and some teriyaki sauce. Grab a bowl or glass baking dish and make a half and half mix of beer and teriyaki sauce. Make just enough to submerge all of your steaks. Now toss in some minced garlic and garlic powder(minced garlic is optional), don’t be shy on the garlic either, its the key ingredient. Take your steaks and rub just a little bit of honey on them. Be shy with the honey, a little bit goes a long way. Drop the steaks in the marinade and let it soak for 6-12 hours(in the fridge of course), then flip over the steaks and let it marinade for another 6-12 hours. For best results, let it soak for a full 24 hours, but don’t do it any less than 12 hours. Cook it up on the grill or broil it in the oven. Juiciest steak you will ever have.

If you do the flank(which I recommend), I usually cut it up into thin strips to serve it. Try this recipe BRP, and then come back and tell me how much you liked it….

Fideos

2 or 3 dried ancho or pasilla chiles, or 1 to 2 tbsp minced ancho chiles in adobo sauce
3 garlic cloves (keep skins on)
3 tbsp olive oil
1 small onion, chopped
1 15 oz. can chopped tomatoes, preferably Muir Glen fire-roasted
1 cup (approx) chicken or vegie broth
1/2 package angel hair, vermicelli, or capellini pasta, broken into 1 to 2 inch pieces
Garnishes: Sliced avocado, crumbled cotija cheese, sour cream.

Cover the dried chiles in hot water to soften, about 10 minutes. When soft, tear or cut into strips. Discard seeds.
 
In a large frying pan (I like cast iron) cook unpeeled garlic cloves in 1/2 tbsp oil over med-low heat until cloves are soft and skins are brown in spots. Set aside to cool, then peel.

In a blender or food processor, roughly puree the canned tomatoes, onions, chiles, and garlic cloves.

Heat remaining oil in frying pan over medium-high heat. Add noodles and stir until slightly browned. Stir in tomato mixture and broth. Turn heat down to simmer and cover the pan.

Cook until noodles are soft, about 10 to 15 minutes. Depending on the type of noodles used, you may need to add more broth, but don’t make it soupy. If all goes right, there will be a little bit of a browned crust on the bottom — it’s the best part!

Serve with the avocado, cotija cheese and sour cream. A squeeze of lime is good too. So is chopped cilantro.
Also yummy with paella-type seafood (shrimp, scallops, clams) or chorizo added in.

Serves 2 as a main dish, 4 as a side.
